Super Easy Tomato Sauce

Have you ever wondered what to do with all of those extra tomatoes from the garden? In the past I have spent an entire day or two steam canning and bottling them but now I have found a new way to preserve them that is super easy and fast.  It doesn't matter if you have all different varieties and sizes of tomatoes even cherry tomatoes.All you need is a good blender,ziploc bags and freezer space.
Simply wash and cut off stems and bad spots... no need to peel! I like the fact that the nutrients in the peels don't have to go out to the compost pile like they did when I used to steam can.  Using a variety of tomatoes can make a really tasty and sweet sauce.

Blend finely or chunky  depending on your preference then pour into a quart size ziplock bag and store in the freezer. For even more convenience, blend  in onion, basil and garlic  for a ready made Italian pasta sauce. I use the plain sauce for stews and soups.  When using in a recipe, the sauce is a little thin for pasta so simply cook off the extra juice or add cornstarch.
