Have you ever wondered what to do with all of those extra tomatoes from the garden? In the past I have spent an entire day or two steam canning and bottling them but now I have found a new way to preserve them that is super easy and fast. It doesn't matter if you have all different varieties and sizes of tomatoes even cherry tomatoes. All you need is a good blender, ziploc bags and freezer space.
Simply wash and cut off stems and bad spots... no need to peel! I like the fact that the nutrients in the peels don't have to go out to the compost pile like they did when I used to steam can. Using a variety of tomatoes can make a really tasty and sweet sauce.
Blend finely or chunky depending on your preference then pour into a quart size ziplock bag and store in the freezer. For even more convenience, blend in onion, basil and garlic for a ready made Italian pasta sauce. I use the plain sauce for stews and soups. When using in a recipe, the sauce is a little thin for pasta so simply cook off the extra juice or add cornstarch.
